Here’s how to keep your monthly trays fresh and ready:

• Freeze (almost) the lot as soon as it arrives
  
• Keep 3 to 5 of the trays in the fridge
  
• Every time you use one, replace it with a frozen one. That way, you’re always a day ahead.
